One of my favorite things, other than bacon, are potatoes. I love potatoes, and corn ya I love corn too but this is about potatoes. I also adore pancakes so blending pancakes and potatoes? Latke! My grandmother use to make them out of Sweet Potatoes or Yams (yes there is a difference but that is for another time) I am sure you have figured out by now that the majority of my recipes are not ones for your diet journal. Not because I eat like this all the time but they just happen to be some of my favorite tried and true recipes. Welcome to the last week of hardcore baking time before the fat man cometh! Mama’s Kitchen Mondays has a special treat! I have a special guest who wrote this lovely little Novelette, Christmas at the Gingerbread Cafe, a sweet and savory contemporary romance. When I saw this I thought how fun to do a review for my recipe feature! After reading the story I knew exactly what recipe I was going to do! Heck they even make almost the same one in the story. On Christmas, heck anytime between fall and the new year, I love Gingerbread coffee. My grandmother introduced it to me and this is a holiday season tradition you will find in my fridge!
I love baking for Yule and Christmas! I have not been able to do this year everything I would like too, but since we get to spend Christmas at the Ninja Warming station on Fort Hood (the folks who kept us safe during the winter storm and who I made special Frostie Floats for), I will get to bake more than I expected. HOWEVER, I usually do but these little dandies which are one of my favorites!
