Bacon Surprise Zucchini Wraps
Total time: 
  • 2-3 large zucchinis or winter squash
  • 8-ounces cream cheese (room temp)
  • 10 strips of thing center cut bacon
  • 10 toothpicks (soak in water)
  • course ground pepper
  • extra virgin olive oil
  1. Cook the bacon to a just finished limp state (if you are cooking under the broiler, cook it till right before it crisps). Drain on paperbags or baking rack. And cool in the fridge.
  2. Meanwhile, cut your zucchinis up into 10 long slices. Lay slices of zucchini on a cookie sheet side by side.
  3. Place a chilled piece of bacon on top of each slice of zucchini.
  4. Spread a thin layer of cream cheese over each slice of bacon.
  5. Roll each one up and secure using a toothpick. Move to fridge and chill 30-60 minutes.
  6. Brush each roll with olive oil & dash the pepper to taste (you can also do light basil or other herbs with a bite but no salt)
  7. Transfer each roll from your cookie sheet to your grill and heat on medium high for 5-7 minutes each side or until the zucchini is full grilled and the bacon looks cooked.
  8. Remove from grill. Let cool for a few minutes and serve.
  9. *To avoid cheese leakage, make sure you only spread a thin layer of cream cheese on top of the bacon. To much will cause leakage and can leave you with quite a mess.
  10. *We grill all year long, even in -30F weather. If you are doing this inside you can throw this under the broiler with the shelf placed on the second from the top (NOT the top rack). Keep watch or it will cook to fast. This is why you pre-cook the bacon almost crisp because the zucchini will brown just right.
