MAMA'S KITCHEN MONDAYS - FRENCH TOAST IN A CUP

fourThere are plenty of nights, heck mornings, heck any time of the day where I find myself starving and lazy yet craving something that takes a bit longer than five minutes to make. I also hate cooking on the stove during summer!  This recipe is really festive, but some folks do not like it because they don’t use the right bread. I made this Saturday and took photos but I did not have the right bread. Wait what is the right bread? I love a thick cut piece of sourdough bread. But a nice french bread torn up in pieces. You can use any dense bread, multi-grain, old-croissant.

Microwave French Toast in a Coffee Cup (2 -5 minutes to make)

Ingredients
  • milk, cup, cinnamon, egg and breadbutter, melted
  • 1 egg
  • 3 tbsp milk
  • sprinkle of cinnamon
  • drop of vanilla extract (optional)
  • maple syrup, raisins, fresh fruit whipped cream for topping (optional but whatever you would normally have on french toast, have on hand!)
Directions:
  1. Heat a pat of butter till just melted in the microwave and swirl the melted butter to coat the inside of a mug.
  2. Tear bread into small pieces and drop into mug.
  3. Whip It!Whisk egg with milk, cinnamon, salt and vanilla in a small bowl then pour over bread. (I did it all in the cup, realized I had messed up so I added the bread in dumped it out into bowl and tossed it, meh it worked!)
  4. Gently press the bread to absorb the liquid. (again… ya this is what you are SUPPOSE to do!)
  5. Microwave on high for 1 1/2 min.  
  6. Drizzle with maple syrup. (Let’s face it, drizzle, drown, or use whatever syrup you want, douse it with some whipped cream and sprinkles! LIVE it up!)

NOTE – Here is the cool thing, you can actually have a lot of fun with it. You can pour straight cream on top or even non-dairy cream. I have poured hot coffee with lots of extra cream in it, and wow it was lovely! Just a bit! It was delicious! I have also stirred in raspberries from outside and even some raisins  it was awesome!

  2. Actually the “right” bread is leftover Sabbath Challah bread, egg challah to be exact. There’s a diner in the Society Hill area of Phillie that does a Sunday Brunch. They serve it as 2 thick slices of Challah and it’s to die for. LOL
    Show me some love!

    And yes chocolate cake in a cup. Fast and quick fix for the chocolate cake cravings late at night. 🙂

  4. Yum. I would eat these for dessert:) Only thing I’ve made in a cup is chocolate pudding. I once made banana bread in glass jars:)
